Smoked Salmon is considered a delicacy and here at T&J Seafoods we smoke our own salmon almost daily at both of our stores. We have been smoking our own seafood for more than 20 years. We make 3 varieties, cold, hot and candied (which is our spicy version). We use Atlantic Salmon for our smoked salmon products.
Cold Smoked Salmon
You might know only know smoked salmon from what you find in the flat, vacuum-sealed packs at the grocery store and while it holds some popularity, it does not come close to the taste of our freshly smoked salmon prepared for you daily at both of our stores. In fact the mass-produced (and previously frozen) smoked salmon from the grocery store will be bland tasting in comparison to our fresh, mouthwatering and never frozen smoked salmon. We use only the best Atlantic Salmon and we smoke daily so that you get the freshest smoked salmon you’ll ever taste. You’ve just gotta try our Cold-Smoked Salmon.
Our Cold-Smoked Salmon is first cured with a dry-rub of brown sugar and salt – for approximately 24 hours. It has the smoke blown onto the fish while maintaining a temperature under 80 degrees Fahrenheit for 12-14 hours. You can eat our Cold-Smoked Salmon on its own, or prepared in cold dishes.
Hot (Cooked) Smoked Salmon
To alleviate any confusion, hot smoked salmon is not spicy. The name “hot” refers to the temperature it is smoked which is much higher than our Cold-Smoked Salmon.
Hot-smoked salmon is cured in a brine of brown sugar and salt before being smoked. After the salmon has been cured 1-2 hours, it is smoked. We cook our Hot-Smoked Salmon to at least 150 degrees Fahrenheit to the point it is fully cooked and flakey.
This smoked salmon tastes great on its own and could easily be added to dishes like:
- rice bowl
- soups like corn chowder
- smoked salmon dips
